Chicken noodle soup. The soup that a lot of people only eat when they are sick. But take that and add cream, and now that is a whole new dish altogether. Then take it one step further and add spaghetti noodles. Is that even chicken noodle soup anymore? Of course it is! Just the creamy version. Stick around and I’ll tell you a little bit about how this recipe came to be and why I make it again and again.


What Makes This Soup Different

When you think of chicken noodle soup, most people think of a smooth hearty broth with vegetables and rotini noodles. However, this soup is a little different. Now yes, it still has a smooth broth and lots of vegetables, but there is one star ingredient that really makes this dish stand out.

Heavy cream.

Now before you start thinking that adding heavy cream to chicken noodle soup sounds strange, trust me on this one. The cream doesn’t overpower the soup or turn it into something completely different. Instead, it gives the broth a rich, velvety texture that makes every bite feel extra cozy and comforting.

It takes this soup from a simple weeknight meal to something that feels warm, filling, and almost restaurant worthy. The broth still has all of those classic chicken noodle soup flavors you know and love, but the added cream gives it a smoother finish that makes it hard to stop going back for “just one more bowl.”

Rotini noodles are usually the obvious choice for chicken noodle soup. Some people might even say spaghetti noodles don’t belong in soup at all. Others may prefer rotini because the spirals can trap some of the broth, and honestly, they are not wrong.

But I am here to tell you that spaghetti noodles absolutely belong in soup when prepared correctly. What I do in this recipe is break the noodles in half before adding them to the pot. That way they are not too long and end up being the perfect size for soup.

There is just something about spaghetti noodles in a creamy broth that makes this dish feel extra cozy and comforting. The noodles soak up all of that rich flavor and almost make the soup feel like a mix between a classic chicken noodle soup and a creamy pasta dish. It may not be traditional, but sometimes the unexpected choices end up being the best ones.


Why I Make This Again And Again

I first made this soup when I was sick (of course) but wanted a twist on your average chicken noodle soup. So, I decided to add cream, and honestly, I will never make chicken noodle soup the old way again.

The cream mixed with the chicken broth and all of those vegetables? Chef’s kiss. It was rich, cozy, hearty, and everything I wanted in a comfort meal. I personally am a sucker for cream and pasta, especially when they are mixed together, so once I realized how well the creamy broth worked with the spaghetti noodles, I completely fell in love with this recipe.

Another thing I love about this soup is that it does not take forever to make. If you are newer to cooking, it may take a little extra time, but once you get comfortable in the kitchen, this recipe comes together surprisingly quickly. And trust me, every minute is worth it once you sit down with a warm bowl of this soup.

This recipe does have quite a few ingredients, I am warning you now. However, most of them are probably already sitting somewhere in your kitchen. I am going to highlight just a few ingredients that really make this dish what it is because without them, the flavor would not be the same.

    Garlic is one of those ingredients that feels almost mandatory in most dishes. If there is no garlic, I probably do not want it. This soup is no exception. The garlic helps give the broth a deep, hearty flavor that works perfectly with the cream. Garlic and cream together? You already know. That combination is a match made in heaven.
  • Dried Oregano
    Oregano is already a strong herb on its own, but dried oregano has an even deeper flavor. That is why I prefer using dried oregano in this recipe. There is absolutely nothing wrong with fresh oregano, but the dried version gives this soup that extra punch of flavor that helps balance the creamy broth perfectly.
  • Bay Leaf
    Bay leaves are one of the most underappreciated ingredients to me. A lot of people see a bay leaf in a recipe and skip right over it because they do not see the point in buying something they may only use once. But honestly, dried bay leaves last forever, and they bring a flavor that no other herb really can.
  • Bay leaves have a subtle depth that helps pull all of the flavors in the soup together. Without them, the soup would still be good, but it would not have quite the same comforting flavor.

Cozy & Creamy Chicken Noodle Soup

Ingredients:

  • 2 Tablespoons Olive Oil or Butter
  • 1/2 Small Onion
  • 2 Carrots, Peeled and Sliced
  • 2 Celery Stalks, Sliced
  • 3-4 Garlic Cloves, Minced
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Parsley
  • 1/2 teaspoon Dried Oregano
  • 1 Bay Leaf
  • 4 Cups Chicken Broth
  • 1/3 Cup Heavy Cream
  • 1 Cup Diced or Shredded Chicken
  • Salt and Pepper to Taste
  • 6-8 oz spaghetti noodles, broken in half

Directions:

  1. Heat the olive oil/butter in a large pot over medium heat. Add the onion, carrots, and celery. Cook 5-6 minutes until softened.
  2. Add garlic and cook for 30 seconds. Stir in thyme, parsley, oregano, and the bay leaf.
  3. Pour in the chicken broth and add chicken. Bring to a gentle simmer.
  4. Add the broken spaghetti noodles and cook 8-10 minutes, stirring to prevent clumping.
  5. Season with salt and pepper and stir in cream.
  6. Remove the bay leaf and serve warm. Enjoy!

Notes & Tips

  • Break The Spaghetti Noodles Before Cooking Them
    I know breaking spaghetti noodles before cooking them can be difficult because pieces like to go flying everywhere. What I do is grab a small handful of pasta at a time, hold it tightly against my chest with my hands close together (but not quite touching), then break it. You will get a much cleaner break without pasta pieces ending up all over your kitchen.
  • Taste Before Serving
    This one may seem obvious to some people, but not everyone tastes their food before serving it. Trust me, this is one recipe you are going to want to taste first. Tasting before serving lets you know if any seasonings need to be adjusted. Added too much salt? Add a little more cream. Added too much cream? Add a little more salt. It is an easy fix as long as you catch it before serving.
  • Leftovers Will Thicken
    This is one I learned the hard way. If you have leftovers, the soup will thicken because the pasta continues soaking up the liquid as it sits. My tip is to add a splash of broth or cream while reheating it. That will help loosen everything back up and make it taste just as creamy and comforting as it did the first day.

This soup is already fantastic on its own, but pair it with the perfect side and it goes from fantastic to phenomenal! Here are a few side ideas that pair perfectly with this creamy comfort dish.

    In my family, biscuits (especially sourdough biscuits) are almost always served with soup. It does not matter what kind of soup it is, there are probably biscuits sitting nearby. I personally love dipping mine right into the soup and letting it soak up all that creamy flavor. Trust me, if you make this soup, biscuits are a must.
  • Grilled Cheese
    I know grilled cheese is usually paired with tomato soup, but I am here to tell you it is time to branch out a little. Try dipping a simple grilled cheese into this soup and you may never look at soup pairings the same way again.
  • Simple Side Salad
    I know this soup already has plenty of vegetables in it, but sometimes you just need something cold and fresh alongside something hot and creamy. A simple side salad is another perfect option for this dish because honestly, who does not love a good soup and salad combo?
