Fish tacos. What can I really say about these fish tacos other than… YUM! I’ve tried my fair share of fish tacos, but none of them compare to these. When most people think of fish tacos, they picture something crispy. Not here! These tacos aren’t crispy, but they are packed with flavor and paired with a beautiful creamy lime sauce that will have your mouth watering. Trust me—once they’re gone, you’ll already be wishing you had more.
Tortilla Hack
This hack is either obvious or completely new to you, but I’m sharing it anyway. First off, this works best with corn tortillas. You can do it with flour tortillas, but I personally can’t stand them, so corn it is!
The trick? Don’t use them straight out of the bag—heat them up first.
Not only does this keep you from putting hot fish onto a cold tortilla, but it also helps strengthen them so they don’t fall apart as easily. And no, you don’t need to use the oven. Just grab a small frying pan, set it to medium heat, and cook each tortilla for about 30–45 seconds per side.
As a bonus, warm corn tortillas just taste better. I don’t know why… they just do. So when you make these tacos, give this a try—you might be surprised at the difference it makes.
Marinating
This recipe doesn’t take long to make—about an hour total (maybe a little more if you’re newer to cooking). The most time-consuming part is letting the fish marinate.
All you need to do is mix up the marinade, add it to a bag with the fish, give it a gentle shake (without breaking the fish apart), and let it sit for 30–40 minutes.
And let’s be real—you don’t have to sit there watching the clock. You can clean the kitchen, do the dishes, feed the dog… you know, life. Because honestly, watching paint dry might be more entertaining than staring at a timer for 40 minutes.
How To Tell When Fish Is Done
This is something I really wanted to include because a friend once asked me how to tell when fish is fully cooked.
If you’re cooking plain white fish with no seasoning or marinade, it will turn fully white as it cooks. And yes—I know what you’re thinking: “Isn’t white fish already white?” You’re not wrong! But raw fish has a slight transparency to it. Once it’s cooked, that transparency disappears.
With this recipe, though, it’s a little harder to tell because the fish is coated in that flavorful marinade. So the best way to check? Flaking.
Cooked fish will flake easily with a fork. Raw fish is already delicate, but once it’s cooked, it becomes even more tender and breaks apart effortlessly. Just take a fork and gently press—if it flakes easily, you’re good to go. If not, give it another minute or two.
Why These Ingredients Matter
Every great recipe starts with great ingredients, and this one is no exception. Some of these ingredients might surprise you, while others are exactly what you’d expect.
Even though this recipe is simple, every ingredient plays an important role. If you leave something out, you’re not just making a small change—you’re creating a completely different dish. Because of that, I won’t be breaking them down individually… just trust the process on this one.
Seasoned Fish Tacos With Creamy Lime Sauce
Ingredients:
Fish:
- 3 Tablespoons Olive Oil
- 1 Tablespoon Lime Juice
- 1 Tablespoon Chili Powder
- 1 teaspoon Ground Cumin
- 1/2 teaspoon Salt
- 1.5 lbs. Cod Fillet
- 2 Tablespoon Butter (for frying)
Sauce:
- 1/2 Cup Mayo
- 1/3 Cup Sour Cream
- 2 Tablespoons Lime Juice
- 1 teaspoon Garlic Powder
- 1 teaspoon Smoked Paprika
- 1/4 teaspoon Salt
Serving/Toppings:
- Corn Tortillas
- Cabbage
- Shredded Cheese
- Pico De Gallo
- Corn
Directions:
- In a bowl, combine the olive oil, lime juice, chili powder, cumin, garlic powder, and salt. Stir well. Place the cod in a Ziploc bag and pour the marinade over the fish. Gently shake the bag to coat, being careful not to break the fish apart. Transfer to the fridge and let marinate for 30–40 minutes.
- When the fish has been marinating for about 25–30 minutes, prepare the sauce. In a bowl, mix together the mayo, sour cream, lime juice, garlic powder, smoked paprika, and salt until smooth. Place in the fridge until ready to use.
- Next, warm the tortillas. You can do this while the fish is finishing its marinade or while it cooks. Heat a small frying pan over medium heat and cook the tortillas for 30–45 seconds per side, until warm.
- Once the fish is done marinating, melt the butter in a skillet over medium-high heat. Add the fish and cook for 4–5 minutes per side, or until it flakes easily with a fork. Remove from the pan and gently break into chunks using a fork or spatula.
- Add the fish to the warm tortillas, drizzle with the creamy lime sauce, serve immediately and enjoy!

- Be Gentle With The Fish
Cod is very delicate, especially after marinating. When mixing and cooking, handle it carefully so it doesn’t fall apart too soon. - Don’t Skip The Marinade
Even just 30–40 minutes makes a big difference in flavor. It allows the fish to really soak everything in without becoming too soft. - Taste The Sauce Before Serving
Like my chef told me in culinary school, taste before you serve. And besides, everyone’s preference is different—if you like it more tangy, add a little extra lime juice. Want more depth? A pinch more smoked paprika goes a long way.
