Everyone has heard of potatoes and sausage going together, but adding apple takes a savory dish and gives it just a touch of sweetness. I’ll be honest—I wasn’t sure how this one would turn out, but spoiler alert… it was beyond amazing.

Now get cozy, because I’m about to take you on a wild adventure about experimenting, changing things, and of course… potatoes!


Experimenting In The Unknown

I’ll be honest—I’ve never used apple in a main dish before. Stuffing doesn’t count because that is a side dish to me.

But when I came up with the idea for this dish, I was actually playing a game with a friend. They gave me three mystery ingredients, and I had to create an imaginary dish using them. The three ingredients? Potatoes, apple, and rosemary.

So naturally, my chef brain went to work—and this is what came out of it.

From the moment I decided to make this dish to the moment I actually started cooking, I had no idea how it would turn out. I wasn’t sure if it would be a complete flop or a success. Even while it was cooking and smelled amazing, I was still unsure.

But I kept going.


The Cooking Process

This dish was a little different from anything I had ever cooked—and that was mainly because of the apples. I had to really think about what to add and when.

Take the apples, for example. They’re one of the last things added because they cook quickly, and you don’t want them turning mushy. And trust me, I’ve made enough apple pies to know that mushy apples are not the goal.

I do have a small confession to make. When I finished cooking this dish, my potatoes weren’t as crispy as I wanted them to be. They had great color—but the crispiness just wasn’t there.

So, I’m here to help you avoid that.


How To Get Potatoes Crispy

  1. Don’t Use Regular Butter Along
    Use a combination of oil and butter (2 tbsp oil + 1 tbsp butter) or use clarified butter.
  2. Cook Over Medium-High Heat
    Medium heat won’t give you that crisp—medium-high is the sweet spot.
  3. Don’t Overcrowd The Pan!!!
    If the pan is too crowded, the potatoes will steam instead of crisp.
  4. Leave Them Alone!
    Once they hit the pan, don’t touch them for 3–5 minutes. Then flip and repeat. (Yes… I learned this the hard way.)
  5. Salt At The Right Time
    Add salt either at the beginning or after they start crisping—not in the middle, or you’ll pull out moisture.

How It All Tasted + Herbs

When making this dish, timing your rosemary is key. You’ll want to add the rosemary sprigs and minced rosemary at different times so they don’t overpower everything.

As much as I love rosemary, I don’t want a dish that tastes like only rosemary—and I don’t think you do either.

Add the rosemary sprigs after the sausage, but before the apples. This allows that flavor to infuse into the sausage and potatoes. Then remove the sprigs after adding the garlic.

For the minced rosemary, add that with the rest of the herbs and spices at the end. Trust me—you’ll thank me later.


A Moment To Cherish

After everything was cooked and ready to plate, I took a moment—not just to take pictures, but to admire it.

This is something I’ve always done. I’ll stand there, looking at what I made, smelling it, just taking it all in. And I find myself thinking, “I did this. I made this.”

Over the years, I’ve learned to cherish those little moments—and the gifts I’ve been given. Cooking is one of those gifts, and I truly believe it’s something Jesus placed in my life for a reason.

Why These Ingredients Are Important

Some ingredients in this dish might not stand out right away when you take a bite—but they play a huge role in building the flavor behind the scenes.

  • Rosemary (Sprigs + Minced)
    Using both rosemary sprigs and minced rosemary adds layers of flavor. The sprigs infuse a subtle, earthy flavor while everything cooks, while the minced rosemary at the end gives a stronger, more noticeable finish. This keeps the rosemary from overpowering the dish while still letting it shine.
  • Garlic
    Garlic is one of those ingredients you might not always notice right away, but you would definitely miss it if it wasn’t there. It adds a rich, savory depth that helps tie all the flavors together.
  • Cinnamon (Optional, but recommended)
    This is the ingredient that surprises people. It doesn’t make the dish taste like cinnamon—it just adds a subtle warmth that enhances the apples and brings everything together in a really balanced way.
  • Apple Cider Vinegar
    This might seem like a small addition, but it makes a big difference. It brightens the dish at the end and cuts through the richness, keeping everything from feeling too heavy.

Potato, Apple & Sausage Skillet

Ingredients:

  • 4-6 Potatoes
  • 3 T Butter
  • Sausage
  • ½ Medium Onion
  • 2-3 Cloves Garlic
  • 2-3 Apples peeled
  • 1 T Rosemary + 2 Sprigs
  • ½ t Thyme
  • ½ t Smoked Paprika
  • Pinch of Cinnamon
  • ¾ t Salt
  • ½ t Pepper
  • 1 t Apple Cider Vinegar

Directions:

  1. Melt butter in a large skillet over medium heat.
  2. Dice the potatoes, then add them to the skillet. Cook until they begin to soften and lightly crisp.
  3. Add the sliced sausage and cook until browned. Stir in the onions, then add the rosemary sprigs and diced apples.
  4. Add the minced garlic and cook for about 30 seconds, just until fragrant. Remove the rosemary sprigs.
  5. Stir in the herbs, spices, and apple cider vinegar. Mix well and let everything cook together for a few more minutes until fully combined and heated through.

Notes & Tips

  • Get Those Potatoes Crispy
    Make sure your pan isn’t overcrowded and give the potatoes time to sit undisturbed before stirring. That’s how you get that golden, slightly crispy outside.
  • Balance Is Everything
    This dish is all about that sweet and savory combo. If it tastes a little too sweet, add a tiny splash more apple cider vinegar. If it’s too sharp, let it cook a little longer to mellow out.
  • Make It Your Own
    You can swap the sausage for chicken sausage or even turkey sausage if you want something a little lighter.
