I am going to just cut to the chase with this one, this cornbread is made from a box. But wait! Before you leave, listen. This isn’t just any recipe. This is my recipe, as are all of the recipes on here, but this one is special. This was the first cornbread recipe I ever made, which is why I want to share it with you! So grab your favorite box of cornbread mix, an apron, and a whisk, and let’s get cooking!
Why Boxed?
Just like everyone else, I didn’t know that much about cooking when I started. I knew very little. So little that I used boxed cornbread mix when I made it because that is what I knew. And you know what, I liked it! I loved it so much that I modified that boxed cornbread recipe to perfection. Well, almost perfection, given the fact that nothing is perfect or completely finished when it comes to cooking. I added a few things to it to make it creamy and have actual corn kernels in it because I was always so disappointed that cornbread mix didn’t have corn kernels in it. But when I made it myself, I changed that.
I understand that boxed cornbread can be more for beginners, but when you think about it, it can also be for professional chefs, too. There are plenty of chefs and bakers who take boxed items, like cake mix, and make something great out of it, and you would never have guessed that it started with something from a box. That is the same thing with cornbread! You can make cornbread from a box and have it still be amazing by changing it and adding things that you want to make it better.

I know how easy cornbread is to make from scratch, but sometimes you just need something quick. Like, really quick. The Easiest Cornbread You’ll Ever Make
Ingredients:
- 2 Packages of Corn Muffin Mix
- 1 Can Creamed Corn
- 4 Tablespoons Melted Butter
- 1/3 Cup Honey (Or more if your heart desires)
- 3 Eggs
- 2/3 Cup Milk
Directions:
- Preheat oven to 425°F.
- In a large bowl, mix all the ingredients together. (The batter will be lumpy — that’s okay!)
- Pour the batter into a greased cake pan.
- Bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
- Serve warm, drizzled with extra honey if desired.
Notes & Tips
- Don’t Overmix The Batter
Stir just until everything is combined. Overmixing can lead to dense or tough cornbread, and we want this to be light and tender. - Let It Rest Before Cutting
As tempting as it is to slice right in, letting the cornbread rest for a few minutes helps it set and makes for cleaner slices. - Great For Leftovers
If you have leftovers, store them in an airtight container at room temperature for a day or two. You can also warm slices in the microwave for a quick side later on.
