Let’s be honest — sometimes you don’t feel like cooking, but you still need to feed the family… or yourself… or your friends. Whatever the case, people need to eat. Yes, that includes you — and before you ask, no, ice cream is not a meal. This recipe is simple to make, and the end result will have you craving more!
Throughout The Years
I’ll be honest — I don’t remember the first time I had this dish. But I do remember all the times my family and I have tweaked it — whether it was to cut down cooking time (more on that later) or to make it even more delicious… which I didn’t know was possible.
I remember tasting it one time and thinking, “Wow, this is really good.” And it was. It still is. Some of my favorite dishes are complicated, but this one? It’s simple — and I love it not because of its simplicity, but because of the flavor.
Cooking Time
Alright, serious topic here — the cooking time is… a little on the longer side. Fine, a lot on the longer side. It takes 2 hours to make. But, good news: you can shorten that!
- Cut the chicken into smaller chunks to speed up cooking.
- Cook the chicken ahead of time so all you need to do is cook the rice and heat everything up — about 30 minutes total.
Growing up, we often cut the chicken into chunks and put it in raw — that method took about an hour. Still too long for some, I know. But whether you’ve got hungry kids chanting for dinner or you’re just starving, there’s a way to make this happen faster.
Budget-Friendly
As I said before, some of my favorite recipes are the complicated ones. But what if I told you this recipe is not only easy, but also budget-friendly? That’s right — you don’t need to spend a fortune here.
Only 6 ingredients are needed! Of course, you can add more to make it special (and I encourage experimenting!), but just know that the more ingredients you add, the higher the cost. Keep it simple and your wallet will thank you.
Busy Weeknight Hero
We’ve all had those days — long, exhausting, and the last thing you want to do is cook. But after three “fend for yourself” nights in a row, there’s only so many ham-and-cheese sandwiches you can eat.
Picture this: you get home around 3 or 4 p.m., toss together Savory Chicken N’ Rice, pop it in the oven, and relax while it bakes. By dinner time, you’ve got a hearty meal that’s going straight into your “quick and easy” recipe list.
Fun Little Twists
Cream of mushroom soup and cream of chicken soup… from a can?? Yep. That’s how I made it the first time. But you can absolutely use homemade soups if you prefer — there’s no rule against it (trust me, I checked… not really).
If you’re into homemade, go for it! I’d be proud to see you add your own twist to this recipe. You can even make and freeze your homemade soups so you’re always ready for Chicken N’ Rice night.
